  1. Pretty decent, coming from a professional cook and I used to work in a smash burger shack for about a year and half…. Press the burgers out ahead of time and let them set as a rounded patty in the fridge…. Then when you go to cook them press them flat as you did with the weight…. The reason yours curled so much is because they were balls…. You will get a better crispier crust next time.
