PREPARATION
Steaks rubbed in kosher salt, tired and on to a wire rack and in to the fridge uncovered for 5 hours to overnight. Steaks tempered 2 hours before grilling.
COOK
Grill greased with the fat cap. Hard sear on both sides, then moved to indirect up and away for gentler heat with some coals below to drip on for some smoke. After 5 minutes, keep repeating this with a quick sear and back to indirect. Once ready, rested 10 minutes high up over the coals to carry over cooking to not leak juices all over the board. Hit with the searzall for a quick blast of heat before serving.
