10 minute Chinese egg tomato noodles, you can use this recipe for any noodles or pasta!



Chinese Tomato Egg Noodle Recipe:

Ingredients:
– 2 eggs
– 3 tablespoons cooking oil
– 3 tablespoons chopped garlic
– 1 tablespoon minced green onions
– 1 tablespoon chopped red peppers
– 1 fresh tomato, cubed
– 3 tablespoons soy sauce
– 1/2 tablespoon dark soy sauce
– 1 tablespoon oyster sauce
– Pinch of salt
– 1 teaspoon sugar
– 2 cups chicken broth
– Dried noodles
– Additional green onions for garnish

Instructions:
1. In a pan, pan fry the eggs until cooked. Set them aside.
2. In the same pan, add the cooking oil and heat it up.
3. Stir fry the chopped garlic, minced green onions, and chopped red peppers until fragrant.
4. Add the cubed fresh tomatoes and continue stir frying for a few minutes until the tomatoes start to soften.
5. Pour in the soy sauce, dark soy sauce, oyster sauce, salt, and sugar. Mix everything well.
6. Add the chicken broth to the pan and bring it to a boil.
7. Once the broth is boiling, add the dried noodles and cook them for about 5 minutes or until they are al dente.
8. In the end, add the pan fried eggs to the pan and let them cook for about a minute.
9. Serve the Chinese tomato egg noodles hot, garnished with additional green onions.

  1. This looks delicious, but I'm diabetic. Can I substitute whole grain noodles and some protein and cook a few minutes longer and still retain the flavor and character of the dish?

    I'm thinking meat or some cooked beans/other legumes for the protein. I'm open to suggestions.
