Preheat your oven to 375°F (190°C).
In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
Add the diced onion and minced garlic to the skillet with the ground beef. Cook until the onion is softened, about 3-4 minutes.
In a separate bowl, mix together the condensed cream of mushroom soup and beef broth until well combined.
In a greased 9×13 inch baking dish, layer half of the sliced potatoes.
Spread half of the ground beef mixture over the potatoes.
Pour half of the soup mixture evenly over the beef layer.
Repeat the layers with the remaining potatoes, ground beef, and soup mixture.
Cover the baking dish with aluminum foil and bake in the preheated oven for 45-50 minutes, or until the potatoes are tender.
Remove the foil, sprinkle the shredded cheddar cheese over the top, and return to the oven for an additional 10 minutes, or until the cheese is melted and bubbly.
Garnish with chopped parsley if desired before serving.
