Keto Clusters Recipe:
Ingredients:
9 oz bag Sugar free Chocolate Chips
1 Cup mixed nuts or seeds
1 Cup Unsweetened Coconut Flakes
3 T Butter
(Optional) 2-3 T Peanut Butter OR Almond Butter
Mix Nuts or Seeds and Coconut in a bowl. Melt Butter over Medium low heat until half melted and add in chocolate chips. Stir CONSTANTLY until melted. Add nut butter if desired and pour over nuts and coconut. Drop onto parchment lined baking sheet and refrigerate until chocolate has set or you can’t stand it anymore.
Keto Pineapple Pudding Whip:
Ingredients:
16 oz Cream Cheese (2Pack), softened
1 3/4 Cups Heavy Cream if using pineapple juice, 2 cups if not
1/2-1 cup sweetener (to taste)
(VERY OPTIONAL) 1 6 oz can pineapple juice(Adds 24 g carbs to the entire dessert) OR use 2 t of extract of your choice.
Use a hand mixer and whip the cream cheese up proper, as shown. Add in pineapple juice if using and the cream. Add in sweetener and mix until desired consistency. Refrigerate at least a half hour.
Keto Rice Krispie Treats:
Ingredients:
6 cups pork rinds (chocolate or regular or both)
1 1/2 sticks or 12 T Butter
2 bags of Max Mallows:
Break or chop pork rinds into desired size. Melt 1 stick of butter and stir into the pork rinds, coating them proper. Put them on parchment paper lined baking sheet and bake at 350 for 5 minutes. Take them out and transfer to a bowl.
In a medium size pot, on medium low heat, melt the other half stick of butter halfway and then add in your 2 sacks of Max Mallows.
Once it looks like it does on the video, pour it over the rinds, mix and add to a 7×7 or 8×8 pan and press like I did in the video. Let em cool, cut em and enjoy. It’s best to eat right away, but if not, I keep them in the microwave or counter. The humidity in the fridge is not their friend.

To take the nut clusters to another level, add at least 1/2 tsp of kosher salt! You will be glad you did!
Tried the pineapple fluff. It didnβt set up like yours did after whipping the HWC. I was afraid Iβd make butter if I whipped much longer. Hope it sets up overnight in the fridge.

I believe that Choc Zero marshmallow would do better in melting than what you used.. Plus its a Keto friendly company.. That all they do for the Keto people…

Just picked up some Choc zero Marshmallows have to give them a try. There are several Keto marshmallow recipes on You tube, all seem to take a lot of work.
That pineapple fluff would make a really good cheesecake filling. Maybe do a crushed pecan/butter/brown sugar blend for the crust, then put the fluff over it and bake? Looks so good!!
You can use the paper from the butter to press down on the krispies.

I plan to make the clusters 1st. Just have to get peanuts . They look so good! The rice krispy treats look good too, but donβt want to spend the $ on the special marshmallows.
