_1. Wiener Schnitzel_

– 2 x 6 oz cuts of veal
– salt & pepper
– 2 whisked eggs for the egg wash
– 3 cups bread crumbs
– ⅔ cup flour
– ¾ cup cooking fat (e.g. ghee, calcified butter, or shortening)
– lemon for the garnish

_2. Traditional German Pork Schnitzel_

– 1 x 6 oz cut of pork neck
– salt & pepper
– ⅔ cup milk
– 3 cups bread crumbs
– 1 cup flour
– vegetable oil for frying
– 1 tbsp butter
– lemon for the garnish

_3. Chicken Schnitzel With A Corn Flake Breading_

– 1 x 6 oz chicken breast
– salt & pepper
– 1 whisked egg + 3 tbsp heavy cream for the egg wash
– 3 cups crushed corn flakes
– ⅔ cup flour
– vegetable oil for frying
