I have to disagree, a BLT should be simple and not expensive. (And shouldn't drip fluids) Be proud of what you make, whatever it is, but overdoing it takes points off.
I dont normally like blts, they always just feel like a club sandwich with no meat, but that looks freakin amazing!!😧😧🫡🫡 Also, that tomato looked like it got a custom metallic paint job!! That thing looked amazing also!!😁😁👍👍
I’m a vegetarian because I don’t agree with how factory farms treat the animals. Really refreshing to see your journey for your pork! I support it. That animal likely lived a great life, had a social community, and didn’t know it was about to die before it did. Thats my standard for good meat.

Bacon gets brined in a minute in a factory. Machine has a bunch of needles and it injects it. I don’t see the reason for a 7 day brine. It gets injected and straight into the smokehouse.
