🎃 Pumpkin Pie Cake Bars →

Combine 1/2 package yellow cake mix (less 1/2 cup) with 1/4 cup butter melted and cooled and 1/2 egg. Spread in a 7″-8″ cake pan that will fit in your air fryer and air fry at 320F/160C for 10 minutes. Let cool slightly. Meanwhile, combine 71/2 ounce can pure pumpkin puree with 1/3 cup milk and 1 egg. Spread over the top of the slightly cooled crust. The add topping (which is 2 tablespoons sugar and 2 tablespoons room temperature butter and 1/2 teaspoon cinnamon combined into a crumble). Top and lightly spray with oil or cover with foil. Then cook at 320F/160C for 15 more minutes. Let it cool. Then top with cool whip and enjoy!
(TO make in the OVEN: double the recipe and use a 9×13 pan – bake at 350F/176c for 45-50 minutes).

🎃 3 Ingredient Pumpkin Donuts or Cookies→
1 box spice cake mix
1 15 oz can pure pumpkin (the puree, not the filling)
1 TBSP Pumpkin Pie Spice
Chocolate Chips (for cookies)
Pipe batter into donut pans (cut down to fit in air fryer) – air fry 330F/165C for 6-8 minutes.
Donut Glaze Recipe:
For cookies –

🎃 Pumpkin Pie Turnovers→
1-2 Puff pastry sheets, thawed or Philo dough
Combine 3/4 cup (or half a can) Pumpkin Puree, 1/4 teaspoon of each: cinnamon, pumpkin pie spice, vanilla, And 3/4 tablespoons brown sugar. GLAZE: 1/2 cup powdered sugar and 2 tablespoons milk, 1 tsp vanilla (or use donut glaze). Air fry at 350F/176C for 8 minutes.

🎃 Healthy Pumpkin Bread→
Combine 2 tablespoons oil (or melted and cooled coconut oil) with 1/2 cup honey. Then add 1 large egg (at room temperature). Then add 1/3 cup plain non-fat greek yogurt* (at room temperature) and 1 teaspoon pure vanilla extract. Then mix in 11/2 cups pumpkin puree (not pumpkin pie filling). Then sprinkle in 1 teaspoon baking soda, 11/2 teaspoons ground cinnamon, 1/4 teaspoon ground nutmeg, 1/4 teaspoon ground cloves (or allspice)
1/4 teaspoon kosher salt. And then stir in 11/2 cups white whole wheat flour just until white streaks no longer appear. Place in an 8×4 bread pan (I used this pan and it fit almost all the batter). Place in air fryer at 300˚F/93C for 30 minutes. Let rest for 15 minutes then place on wire cooling rack.
