    It's a collections of all that is crazy delicious in the world of pasta.
    I never forget that day I made Spaghetti Melanzana for the first time… It was such a happy day 😊 and when I crave that sweet feeling, I instantly get up to make it.. It's my number one pasta..

  3. Pasta, vegetables, cheese, usually some onion, white wine, some kind of onion, and basil/parsley. Amazing how so few ingredients makes such amazing tasting food, and so quick too.

  4. The only thing I object to 🙈 is leaving the guanciale in the pan when building your Carbonara sauce. You wind up with flabby guanciale from the pasta water 🤮. I think you get a much better result if you remove the guanciale and add it back at the end just before platting.

  5. In our series "Italian Pasta masterpieces" today – recipe30. Really nice classics, great cooked and presented. Original "Carbonara" – as shown here – is a problem here. I only get "Guancale" on the Internet and the amount is too big. On top of that, it's too expensive. I therefore always replace this with smoked pork belly. Not authentic, but tasty. The "Alfredo" are also delicious, but as far as I know they are not original Italy, but USA, New York.👍👍
