Funny how this is the exact opposite of the "Crisp Thin-Crust Pizza" recipe in the ATK TV show cookbook.
I use a pizza iron skillet pan. I will try the top rack next time. Need a thin pizza dough recipe.
The stone is not the best tool. It may store heat, but it emits the heat slowly. A steel can both store and emit the heat faster.
I don't have a pizza stone but I found that if you preheat a cookie sheet it works nearly as well and gets the bottom nice and brown and crispy
DOH! Why didn't I think of this?? Makes so much sense. The heat from the pizza stone on the bottom goes up through the pizza and immediately reflects back on the toppings. Hmm….. I wonder how two pizza stones, one on bottom, and another on shelf just above would work. Then you would have radiant heat from the stones on both sides.

I wonder if different fuel sources effect the flavor of a pizza pie?
does a wood fired pizza differ in taste and texture from one in an electric oven, or one from a gas fueled pizza stove?

Thanks for the tips….. Wish I would have known this 2 years ago… Now, I'm in the middle of building my wood fired oven but on rainy or cold days, these tips will come in handy!
I am also curious about what the clips are for–is the pizza on a cloth? My problem using our new pizza stone is that I don't have a paddle, so it stuck (pretty badly) to the cutting board and was lobbed into the stone in a panic (as the fire alarm went off–now I understand the pizza stone never needs to leave the oven. Much learning to do!)
