1. STRAWBERRY MOUSSE DESSERT CUPS (makes 4 x 220ml cups)

250g (1+1/4 cup) strawberries (weight without stems)
2 tbsp sugar (adjust to taste)
1 tbsp cornstarch
1 tsp fresh lemon juice
150g biscuits (9 Digestive biscuits)
30g (2 tbsp) melted unsalted butter slightly cooled
250ml (1 cup) whipping cream (minimum 33% fat)
2 tbsp sugar (adjust to taste)
1 tsp vanilla extract (optional)

2. RASPBERRY JELLY DESSERT CUPS (makes 6 x 180ml cups)

1 pack (85g) raspberry flavour jelly powder
250ml (1 cup) boiling water
250ml (1 cup) cold water
150g (1 cup) fresh raspberries
300ml (1+1/4 cup) whipping cream minimum 33% fat
1 tbsp sugar
1 tsp vanilla extract

3. ANY FLAVOUR DESSERT CUPS (makes 6 x 160ml cups)

150g cake or muffins
250ml (1 cup) whipping cream (minimum 33% fat)
1 tsp vanilla extract
80g (1/4 cup) jam

4. AMARETTI AND CARAMEL COFFEE DESSERT CUPS (makes 4 x 160ml cups)

1tbps instant coffee
80ml (1/3 cup) boiling water
80ml (1/3 cup) cold water
300ml (1+1/4 cup) whipping cream (minimum 33% fat)
2 tbsp sugar (adjust according to taste)
1 tsp almond extract
70g (1/4 cup) caramel or Dulce de leche (I use store bought caramel)
1 small pack Amaretti biscuits

5. STRAWBERRY AND COCONUT DESSERT CUPS (makes 5 x 220ml cups)

100g madeira cake or vanilla cake or vanilla muffins (omit if you want gluten free dessert)
150g (3/4 cup) strawberries

coconut pudding layer:
40g (1/4 cup) cornstarch
500ml (2 cups) milk
50g (3 tbsp) sweetened condensed milk or sugar
1 tsp vanilla extract
50g white chocolate
20g (3 tbsp) desiccated coconut
50g (1/4 cup) butter

whipped cream layer:
200ml (3/4 cup) whipping cream (minimum 33% fat)
40g (2 tbsp) sweetened condensed milk
1 tsp vanilla extract

6. MINI FRUIT DESSERT SHOTS

7. MOCHA DESSERT CUPS (3 x 220ml cups)

1 tbsp instant coffee (use decaf for kids)
1 tbsp unsweetened cocoa powder
40g (1/4 cup) cornstarch
50g (1/4 cup) sugar
100ml (1/2 cup) hot milk
400ml (1+1/2 cup) cold milk
50g (1/3 cup) butter
100ml whipping cream (minimum 33% fat)
1 tbps sugar
1 tsp vanilla extract
3 mini cookies for decoration (optional) (omit if you want to keep it gluten free)

8. COFFEE MOUSSE DESSERT CUPS (makes 3 x 250ml cups)

1 tbsp instant coffee
50ml (1/4 cup) hot milk
20g (2 tbsp) cornstarch
2 tbsp sugar
200ml (3/4 cup) cold milk
250ml (1 cup) whipping cream (minimum 33% fat)
2 tbsp sugar
150g chocolate muffins or cake. I used homemade mocha muffins, here is the recipe, it’s very simple to make:

9. 2 INGREDIENT CHOCOLATE MOUSSE

150g dark chocolate
300ml (1+1/4 cup) whipping cream (minimum 33% fat)

For best results all desserts should be refrigerated for at least 1 hour before serving.
All desserts will last in the fridge for up to 2-3 days.
