Ingredients:
1/2 cup raspberries (fresh or frozen)
1/2 c coconut milk
1/4 c pure maple syrup
1/4 c chia seeds
1/2 tsp vanilla extract (optional)
How to:
– To a blender add the raspberries, coconut milk and maple syrup.
– Blend until it’s a smooth consistency.
– Pour the mixture into a container, add the chia seeds and stir until incorporated.
– Cover and place in the fridge for two hours or overnight. The consistency should be thick and creamy like pudding.
– Eat with toppings of choice and enjoy!
