  1. Looks great! Would love to see your interpretation on lamb with cumin. The most popular across China and the middle east (and now popular in Australia too) is lamb skewers (normally small cubes of lamb shoulder with the odd cube or two of lamb fat) with a cumin/chili rub. I've tried similar with lamb loin chops that have come out really well. Been thinking about possibly trying lamb shanks on a smoker or direct heat grill however I'm without a bbq at the moment.

  2. I want to like blue cheeze so bad …. My brain just can’t get around what it is. I’m not saying it’s right and I’ve tried…. Just doesn’t work.

    I did direct heat thighs last night for the first time in a while and there is no simpler and no better chicken IMO.

  3. Boom! Looks so good. But I have to ask…..as I've watched so many of your vids and that damn table top of yours is always clean. What's the secret? How should us mortals clean our butcher block table tops between god-like recipes such as this one?

  4. I love blue cheese and wings , now you said the reason for the iceberg lettuce was for a thought of healthiness but iceberg lettuce is 99.5 percent or something like that water, very little nutrients at all compared to other lettuce like romaine
