I avoid sting rays because they're tough and can be dry when cooked. I've eaten plenty of bat rays and the meat is similar to scallops but you shouldn't overcook them, they can get real tough.

Rays are too cool, they should be off limits just as a matter of principle.
We had the pleasure of eating these masterfully grilled in Malaysia a few years ago, amazing flavor and texture. Similar to a cross between eel and pompano!:)

We fileted a sting ray on vacation last year. I'd pick stingray over red.drum anyway.
