Looks solid. I'd make two changes: wrap some streaky bacon around the chicken before rolling it, and boil the parcel in stock rather than water. Costs more, sure, but it will elevate it a little. I do a similar recipe about once a year where instead of spinach, I stuff the chicken with haggis.
I am begging you to include more detailed recipes in these with cooking temps and things like that
