1 Tbsp (20ml) – Olive or Avocado Oil
900g (1.9lb) – Topside or Skirt Steak, Thinly Sliced (Sirloin, Fillet, Flank, Ribeye)
Salt & Pepper
Creamy Pasta –
1 Tbsp (14g) – Unsalted Butter
6 – Garlic Cloves, Grated
1/4 Cup (60ml) – Beef, Chicken or Vegetable Stock
1 Can or 350ml – Unsweetened Evaporated Milk or Cream
2 tsp (8g) – Smoked Paprika
1/2 tsp – Chilli Powder or Flakes
200g (7.05oz) – Baby Spinach
500g (1.1lb) – Penne or Rigatoni
Salt & Pepper
Garnish –
Flat Leaf Parsley, Chopped
Parmigiano Reggiano, Grated

Great! Just letting you know that you've mislabeled the quantity (in lbs) of penne in the description.
Pro (calorie free) tip for toughter cuts like this – wash them aggressively in water, squishing the meat slices with your hands. Drain well and marinate with a bit of baking soda, salt, pinch of cornstarch, and soy sauce (bonus if you add a splash of Shaoxing wine).
It's an Asian technique that results in tender protein, works equally well for chicken and pork.

I have recently come to appreciate the order you present the steps in when watching another video. It's perfect to follow along, getting all the knife work done in the beginning but never having to wait.
Would velveting the meat for this recipe work? Thinking how it could get tougher with time and/or reheating?
Every time I reheat pasta/sauce like this, mine just shreds up and goes mushy 🙁
