Baking powder actually prevents browning. Several of the Maillard reactions are optimized under lower pH, and baking soda raises pH.
Use fine salt, using kosher salt here makes no sense.

I find the baking powder gives it a metallic aftertaste.
I have used this recipe many times, after historically using AB’s method, and it has given me excellent wings, every time. If you give this a go, try and find air chilled chicken wings for even better results! Thanks for the great recipe, Kenji!
