Ingredients: (Serves 6-8)
๐Ÿฅ“ 6 oz pancetta, cubed
๐Ÿงˆ A knob of butter
๐Ÿง… 1 medium onion, finely diced
๐Ÿฅ• 2 carrots, finely diced
๐ŸŒฟ 2 celery stalks, finely diced
๐Ÿ„ 1 lb ground beef
๐Ÿ– 1 lb ground pork
๐Ÿท 1 cup dry white wine
๐Ÿ… 2 tbsp tomato paste
๐Ÿ… 2 cups passata
๐Ÿฅฃ 2 cups beef stock
๐Ÿƒ 2 bay leaves
๐Ÿง‚ Salt & black pepper
๐ŸŒฐ A pinch of nutmeg
๐Ÿฅ› 1 cup whole milk (warm)
๐Ÿ Tagliatelle pasta

๐Ÿ‘จโ€๐Ÿณ Instructions
1. Render the pancetta over low heat, no oil needed.
2. Add butter and soffritto (onion, carrot, celery), cook for 10 minutes until soft.
3. Brown the meat, seasoning with salt & pepper.
4. Deglaze with white wine, stir, and let it simmer until fully evaporated.
5. Stir in the tomato paste and cook for 2 minutes to deepen the flavor.
6. Add passata, warm beef stock, bay leaves, and a pinch of nutmeg. Stir well.
7. Simmer on very low heat for 2 hours, stirring occasionally.
8. Stir in warm milk and cook for another 30 minutes.
9. Bring everything together in a large frying pan, tossing with cooked tagliatelle and pasta water to make it silky.
10. Serve with freshly grated Parmigiano Reggiano.
