Yeah, if the tomato ones are too spicy, then Buldak probably isn't the category for you. Jajangmyeon is another type of Korean noodles that you might like if you're into black bean sauce.
Ur not suppose to put the seasoning in the bowl. Its suppose to go in the noodle water for flavour. Putting the seasoning in the bowl is probably why u couldnt handle the spice.
When I cook bulduk, somtimes I use chicken broth!
When halfway cooked, I like to move the noodle to a new pan, add milk and let it simmer for a while with low heat. After a while, I add all the seasonings in and mix it all up.
For me it gives great creaminess and tones down the spiciness a whole lot, so I can enjoy the taste with no worries
If you add an egg to the seasoning and some leftover water, it'll like create a broth I think lol
