Wow, took me dozens of loaves to get consistent loaves! Congrats!
I use AP or Rye flour. It grows quicker. You can use another flour for recipe. Many recipes call for more than one flour.

If it took this long then it must be that the temperature was wuite low and even that the environment is more "sterile" somehow
Beautiful loaf! My 5 week old starter was still too weak to bake like that. Sheβs gotten way stronger now though. Good job! π
I made my first loaf about 2 years ago. It turned out flat and gummy so I gave up but kept my starter going and used it for discard recipes. I tried making loaves again and after a few attempts they look amazing. Do not give up! Some failures are good because you learn from them.
