Beer Batter:
1 cup all-purpose flour
2 tbsp rice flour
2 tbsp corn starch
2 tsp salt
1/4 tsp baking soda
1 tsp garlic powder
2 tsp onion powder
2 tsp paprika
1 1/2 cups extra cold lager beer
Tartare Sauce:
1 cup good-quality mayo (Hellmann’s or Kewpie for extra richness)
2 tablespoons finely chopped dill pickles (or sweet pickles if you like it sweeter)
1 tablespoon capers, chopped (adds a nice briny pop)
1 tablespoon fresh lemon juice (for brightness)
1 teaspoon Dijon mustard (adds depth)
1 teaspoon Worcestershire sauce (optional, but gives umami)
2 tablespoons finely chopped fresh dill (or 1 teaspoon dried)
2 tablespoons finely chopped tarragon
1 tablespoon finely chopped shallot or red onion
½ teaspoon garlic powder
Salt and freshly ground black pepper to taste

I love how fast deep frying foods cook. your cardiologist may not, but to make some beautiful oven or stove based cod dish is gonna take a solid hour with prep and cook time and the sides or sauces. this tastes the best and takes ~4 minutes. I’d eat this every day if I could. it’s deep fried but it’s also fish which negates the deep frying

I like coleslaw on mine over tarter sauce. For some reason I've never realy liked tarter sauce dispite liking everything that goes in it.. idk
That sauce (tartar) is so much better if u put half full fat yoghurt (or kwark) this is not to make it healthier it just tastes a lot better. Once I tried i never went back. Even less than 50% mayo. Yum
Trust me when I say, mahi, trigger, or sheepshead is the best fish for this type of thing.

If all you want is the color I suggest turmeric instead of curry powder. Or curry powder if you want that hint of curry flavor.
I use dill pickle juice instead of beer. Chilled batter is key to a nice crisp, but moist inside finish. Also dry the fish before batter.
