Pasta Amatriciana
– 1 Tira gruesa de Tocineta // 1 Thick strip Bacon
– ¼ Cebolla Morada // ¼ Red Onion
– 1 Cda Aceite Oliva // 1 Tbsp Olive Oil
– ¼ Cdta Peperoncino // ¼ Tsp Pepperoncino
– 1 Cda Pasta de Tomate // 1 Tbsp Tomato Paste
– ¾ Taza Tomate // ¾ Cup Tomato
– 2 Tazas Pasta Rigatoni // 2 Cups Rigatoni Pasta
– ¼ Taza Agua de Pasta // ¼ Cup Pasta Water
– Queso Pecorino al gusto // Pecorino cheese to taste
– Albahaca fresca al gusto // Fresh basil to taste
1. Pica en pedazos grandes la tocineta y cocina junto con cebolla y aceite de oliva. // Chop the bacon into large pieces and cook together with onion and olive oil.
2. Agrega peperoncino, pasta de tomate, Albahaca y cocina por 1 minuto. // Add pepperoncino, tomato paste, Basil and cook for 1 minute.
3. Incorpora el tomate y cocina por 1 minuto. // Add the tomato and cook for 1 minute.
4. Agrega la pasta, el agua de pasta, queso pecorino y mezcla. // Add pasta, pasta water, pecorino cheese and mix.

non ci vanno le cippolle nemmeno l'olio
ci va il GUANCIALE non il bacon
il guanciale e gia grasso di per se bisogna cuocerlo a fuoco basso moderato, e li che tirera fuori il grasso su cui voi ci cuocerete la pasta per far assorbire il sapore
si usa la semplice polpa di pomodoro o solo la passata
non storpiate il cibo italiano grazie
