Istu Gosht/ Lamb stew
🔸1/2kg mutton/ lamb
🔸1/4- 1/2 cup oil
🔸2 bay leaf
🔸2 cinnamon stick
🔸4-5 green cardamom
🔸1-2 black cardamom
🔸1 tsp cumin seeds
🔸10-12 black peppercorns
🔸5-7 cloves
🔸6-7 medium onion sliced
🔸4-5 dried red chillies
🔸7-8 garlic cloves chopped/ julienne cut
🔸2 inch ginger julienne cut
🔸Salt- to taste
🔸3-4 green chillies
🔸Handful coriander leaves

Heat oil & add in whole spices, let it crackle a bit & then add in sliced onion along with dried red chillies, garlic & ginger. Sauté everything until the onion turns soft & then add in mutton/ lamb along with salt & mix everything. Add little water only if required (onions will also release water)
Cover & pressure cook till mutton is soft & tender
Garnish with green chillies & add in lots of coriander leaves.
Serve with hot rotis & enjoy 🙃
