Quick tip, once you've flipped the fish, sit the ginger and onion on the fish for a better flavour.
If you want to make it even more delicious, marinade the fish by soaking in some water, with a table spoon of soy sauce, t-spoon of white pepper powder, some sliced ginger and spring onion and a table spoon of rice wine for 15 minutes. This way, the fish won't taste too fishy and since it's basically the same ingredients that you cook it with, it will enhance the flavour.

Pan frying means to be slightly submerged in oil. You're not pan frying. More traditional method at finish would be to pour hot oil over the onion that is on the fish.
I'm keeping this recipe 👍! I'll substitute leeks for the green onion, though. The ingredients are always in my kitchen, so I think I'll add this dish to my weekly dinner menu. Remembering to pour the sauce over my rice, too.
