    Slice the chicken breast into half lengthways. Flatten it by using a meat tenderizer or rolling pin.
    Season with a good amount of salt and pepper.
    Dredge in the plain flour, dip in beaten egg. Then coat with panko breadcrumbs.

    Heat oil. The oil temperature should be around 340-350ºF.

    Fry cutlets 2-3 minutes per side until crispy golden brown.
    ( Frying time can be varied to the thickness of the chicken cutlets. )
