Cooking steak is an expensive hobby, so the method of trial and error can be intimidating. I truly appreciate your advice, Chef Andy, since, at the end of the day, seasoning, brining, basting, all come down to personal preference and taste. Just as long as I don't end up ruining (overcooking) my precious steak I m a happy dude.
Best steak is to start a pichanya on a pan with fat cap first on a low.heat so you can render the fat and cook the steak in its own fat. Use a probe to get temp right. Butter baste with herbs at the end.
Sous vide. Enough said.
Season with salt. Room temp. Let the salt get into the meat. Screamin hot pan. Flipping every 30/40 seconds. Builds up a nice crust. Then touch for the done level. Press the steak. Slight bounce to it. Rest it with foil. Sorted
the only thing is the thickness of the meat. All the clips on the internet always have thick steaks which makes it easier to cook, the supermarket ones are always thin af which you overcook in a sec.

Yeah, I'm really good at one particular cheap cut of steak at my local supermarket and everything else, even the more expensive steaks, turn out worse by comparison.
