Healthier Snickers Inspired Ice Cream Bars😍 These are such a fun and yummy dessert idea!

Ingredients for 12 bars:

for the caramel:
12 pitted dates
3 tablespoons unsweetened peanut butter, I use a pb that is 100% made of peanuts
1 cup milk of choice (240 ml)

for the ice cream:
2 cups of full fat Greek yogurt (500 g)
5 tablespoons unsweetened peanut butter
4 – 5 tablespoons maple syrup/honey
1 1/2 teaspoon vanilla extract

toppings:
roasted lightly salted peanuts
7 oz. / 200 g 80% dark chocolate
lightly salted roasted peanuts

1. Put the dates, peanut butter and milk into a blender or food processor and mix until creamy, add less milk first and then add more if needed
2. Mix the yogurt, peanut butter, maple syrup and vanilla extract together
3. Line a baking dish or container with parchment paper
4. First add the yogurt mixture, then the caramel and lastly sprinkle some peanuts on top
5. Freeze for about 8 hours or overnight
6. Cut into bars, dip in melted dark chocolate and sprinkle crushed peanuts on top
7. Store in an air tight container in the freezer. Let defrost for about 15-20 minutes before serving
