Those hideous American cheeses and Velveeta make delicious sauces with a really good mouth feel. I wish it wasn't true. Velveeta is surprisingly delicious, and to my understanding it's basically a brick of shortening with some salt and artificial color.
I appreciate you not putting green bell peppers on it. Not sure why people think that’s how it’s done in Philly, but provolone, whiz, or american cheese are all acceptable on an authentic cheesesteak.
