  1. Kudos for not putting SUGAR in their to reduce the acidity. For A THOUSAND years people have not needed to put in sugar. And the modern take of putting in BUTTER is completely unnecessary! Mediterranean cooking is supposed to be devoid of using butter. Proper seasoning and plenty of Olive Oil is sufficient!!! Look at all the basil he puts in!!! The only surprise for me was Vodka instead of Red or White wine. Seems to be a solid recipe.

  2. I’ve always added a pinch of brown sugar to any tomato based soup or sauce to take the acid rawness away. No idea where I got that from but it works.
    Will definitely incorporate the cool chopping technique
