  1. Wow! Thank you for taking the time to put out these informative videos. Your production quality has improved a lot in a short time! I can't wait to try your place out on my journey to visiting the top 50 BBQ joints before my 50th birthday!

  2. "Silver Butcher Paper" – Love it! I'm so glad to see more Texas BBQ folks singing the praises of pellet smokers. As a Texan who now lives in NY, I understand the stick burner mentality, and TBH, I'd LOVE to have one. But I also recognize that with my job and my family, I'd likely only use it a few times a year. A pellet smoker allows me to make BBQ on a regular basis, and I don't miss out on my kid growing up. Thanks for this video Cooper!

  3. I’ve never kept a brisket on that long, and I’ve never gotten a bark like that. Was always worried about drying it out, but will definitely try that soon! Have you ever used a smoke tube to add additional smoke for the pellet grill?

  4. to all the weekend pitmasters out there, whether you on a traegar, recteq, or a pitboss, do a foil boat around 165-170 on the pellet grills. Once you have have that gelatinous fat cap around 200-205 that's money. Rest in warmer or oven at 150-170 for 4-12hours and you just made your best brisket ever.

  5. Hey Cooper, cool to know that you guys use Halal brisket at Bar-A. Would it be possible then to visit you guys as someone that only eats Halal, or is there cross contamination with non-Halal meats like pork at the restaurant? I assume there is, but thought I'd ask as I would love to visit the restaurant one day

  6. Still doing my trimming and everything like you showed me. My dang pitboss NEVER gives me a solid dark bark like that, but everyone loves how my brisket, chicken, and pork turn out. Still waiting to upgrade smokers at some point.

  7. Thank you so much for asking & it just shows just how kind I’m certain that you are for asking, “what’s up guys”, because it’s been a long hard week already and it’s only Tuesday can you imagine that but since you asked, “what’s up guys” I will certainly tell you that things could be better but then they could be worse also and isn’t that always the case with life ha ha no matter what’s happening it could always be worse and no matter what is happening it could always be better, although there was one time, in fact actually there’s been a few times in my life where when somebody ask me “what’s up guys” I could actually tell him that things couldn’t be better, “what’s up guys” is that things are going so well but then I stop and think you know I suppose something else great could happen and things could even be better so to answer your question “what’s up guys”, I’ll begin by saying things are actually looking up kind of like Paul McCartney wrote that “everything is looking better” and then the severely negative John Lennon wrote, “couldn’t get much worse“, which means obviously that Paul McCartney was an optimist and John Lennon was a pessimist and we all certainly all know that therefore if you were to ask them “what’s up guys” considering they are two people which certainly fills out the definition of guys plural, they would say what they said in that song which they wrote many songs in their career but can you believe they only wrote Beatle songs or actually all the Beatles songs they wrote were before they were 30 years old which really is astonishing therefore if you were to ask them “what’s up guys” they would have been all over the road from the beginning to the end of the Beatles career yet you ask me “what’s up guys” and I can tell you that things are looking pretty good, I’ll come back later to finish answering your question but thank you so much for asking that question.
