Bake soft and healthy gluten-free bread at home with the goodness of jowar (sorghum) and bajra (pearl millet) 🌾.
This bread is completely wheat-free, maida-free, and vegan — perfect for those on a gluten-free diet or anyone who wants a wholesome alternative to regular bread.
Unlike typical gluten-free breads, this recipe uses psyllium husk and flaxseed for natural binding, making it soft, sliceable, and almost like whole wheat bread 🍞✨.

Recipe (1 medium loaf – ~650–700 g dough)
Ingredients:
Jowar (sorghum) flour – 150 g (1 cup)
Bajra (pearl millet) flour – 100 g (¾ cup)
Arrowroot powder – 75 g (½ cup)
Flaxseed powder – 20 g (2 tbsp)
Psyllium husk – 15 g (1 ½ tbsp)
Jaggery powder – 20 g (1 ½ tbsp)
Salt – 3 g (1/2 tsp)
Instant yeast – 6 g (2 tsp)
Olive oil – 45 ml (3 tbsp)
Warm water – 350 ml (1 ½ cup approx.)
Instructions:
Make psyllium gel – Mix psyllium husk with 250 ml warm water. Stir and set aside 5 mins until thick gel forms.
Flax mix – Mix flaxseed powder with 50 ml warm water. Let it rest for binding.
Dry mix – In a large bowl, combine jowar flour, bajra flour, arrowroot, jaggery, salt, and yeast.
Combine wet – Add psyllium gel, flax mixture, and olive oil. Slowly add ~50 ml warm water until dough is sticky yet kneadable (like wheat dough).
Knead & First rise – Knead well (like whole wheat bread). Cover and rest 45–60 min until slightly puffy.
Shape – Transfer dough into greased loaf tin, smooth top with wet hands.
Second rise – Rest 30–40 min until lightly risen (not double).
Bake – Preheat oven at 180°C. Bake 40–45 min until golden and hollow-sounding.
Cool completely – Rest in tin for 10 min, then cool on wire rack at least 1 hour before slicing.
Tips:
Toast flaxseed powder for nuttier flavor.
Add 1 extra tbsp olive oil for softer crumb.
Always cool fully before slicing to avoid gummy texture.
