This recipe is a near duplicate of a Sicilian Christmas eve meal we prepare. It's a religious meal that eliminates meat from being consumed on every Christmas eve. We have a feast of meat on Christmas day. The only substitute that I can see on this 1st recipe of yours is, fresh basil and Calabria chilies instead of cilantro and your chilies, we also use white wine and San Marzano tomatoes, no potatoes. Everything else is right on target. Also, the Sicilian dialect and Spanish languages are so close, many words are exactly the same. Spain occupied the island of Sicily for almost 2 centuries. Interestingly, our genetic makeup says we are Sicilian and Spanish not full Sicilian or Italian. It's also put together a little differently, we use the shrimp shell's w/the veggies to make a seafood & tomato broth.
