Just a little FYI. Capsaicin is oil, not water, soluble. If you really want to go nuts, soak and blend those chilis in a little bit of oil. 🙂

Weird method of tasting… why not use a spoon
I find that if you want to make a chilli based hot sauce hotter, a teaspoon full of white pepper, sort of fills in the gaps, gives it some sustain .
