I’ve made mushroom “risotto” with oat groats before. It was very delicious and hearty. Plus, it’s healthier than white rice with fewer calories and more fiber
As a person with celiac, I'll stick with risotto. Lol
Adding in slivered almonds close to the end adds a nice soft crunch to contrast the creaminess 😙👌🏼

I'm not sure what I'm doing differently, but I make the mushroom farrotto recipe off the back of the bags I buy and it turns out plenty creamy without blending/cracking the farro. 🤷♀️
Can I do this with freekah?
The bran layer also holds onto a lot more pesticides. So "healthier" is debatable.

I've had this, and loved it! A packaged version even, I was surprised by how delicious the grains themselves were.
Looked up the recipe on the site, and looking forward to including it in my rotation!
Love this recipe! I dont have a blender right now, so Ill try to use my meat mallot on them in a ziplock bag to break several kernels down & hopefully achieve the same effect. Trader Joe's sells Farrow!

Faro is a wonderful grain. It's fairly high in gluten, however, so folks with gluten sensitivity should be cautious.:)
