Great compilation of curry seafood recipes since the method is different from longer cooking meats like goat, beef or chicken. The curry spice has to be thoroughly cooked without overcooking the seafood as you so expertly demonstrated. Have you ever considered bottling and selling your own blend of caribbean green seasoning? I can't find anything that is similar to it at the stores.
