This is a delicious gluten free dessert recipe, a Sugar Free Flourless Apricot Cheesecake.

Sugar Free Flourless Apricot Cheesecake Ingredients
1 lb (500 g) Ricotta Cheese or Farmers Cheese
2 Eggs
1 Tbsp Vanilla Extract
⅓ Cups (100 g) Sour Cream
1 tsp Baking Powder
8 Tbsp (60g) of Organic Corn Starch
6 Tbsp Sugar Substitute like Erythritol with Monk Fruit. Use a little more if you enjoy a sweeter flourless cheesecake. This amount produces a mildly sweet cheesecake.
4-5 Apricots, cut in half.

Instructions to make Sugar Free Flourless Cheesecake
1. Preheat the oven to 350° F (180° C).
2. Grease a spring-loaded baking form.
3. Mix all ingredients together and place into the spring loaded baking form.
4. Slice the whole apricots in half. Decorate the top of the sugar free flourless cheesecake with apricot halves.
5. Bake the flourless sugar free cheesecake at 350° F (180° C) for 45-60 minutes.
6. Allow to cool before cutting..
