Smoked Chicken with Alabama White Sauce
Alabama White Sauce was made famous by Big Bob Gibson’s in Decatur, Al. The acidity pairs great with BBQ and the mayo acts as a moisture barrier especially with poultry. This is not a real common sauce that a lot of people have tried, and this recipe is my take on their classic sauce. Trust me, you have to try it!

  1. What the heck is “White BBQ Sauce”?!… Some kind of cheese/alfredo sauce? 39years on this planet, my first time hearing it. NW Indiana by the way. You can say Chicago to save mind-boggles. Ahh, mayo/vinegar… Coleslaw sauce. On your BBQ Chicken. Prefer the slaw on my BBQ Pulled Pork with real BBQ Sauce, but i like coleslaw.

I always enjoy my best American-style BBQ in Spain, because I am indeed mad about the butter 😂 (Allergic to milk so doubt I'd find anywhere in the US I could eat BBQ – and 'American-style' places in the UK are universally rubbish in comparison. Lanzarote in the Canary Islands is home to some real Barbecue purists – and unexpected meat quality)

    Once the garden is renovated though, I'll be smoking those meats like Zuck 😂

  3. Anyone that knocks alabama white sauce or similar without trying it is a fool.
    Mayonaise does magical things on meat when exposed to direct heat…

    My "ghetto garlic aioli" on fish under a broiler or on a smokey Q is stuff of legends.
