A little trick I learned is to wrap the steaks in about 5 layers of paper towels. Put them on a pan in the frig. Flip them before going to bed. The next morning, take off the paper towles. And repeat. 48 hours of this acts like a dry aging process. I'm telling you you will not believe how much better your steaks will taste.
