No. No processed tomato keeps the natural flavor. Not canned, not pickled, not pureed. Even the Italian top of the notch. Nothing beats fresh tomatoes. Want to use them in pizza, pasta? Go ahead. For Mexican use only fresh tomatoes, please.
Like all produce tomatoes are picked before they ripen to last the journey to the store and the time it takes for them to be sold. I heard this reduces their flavor and the nutrients. Are tomatoes that are destined to be canned pick early as well?

I use a recipe from Cowboy Kent Rollins goulash that is Nothing but canned Tomatoes. Oh, and seasonings ofc. And pasta. Onions? Sure. And garlic.

I hope you guys can recommend some brands. I find some to have a really off putting metalic taste occasionally which is no good
