You need to remove the silver skin on the back of the ribs. When you do that. The flavor will penetrate the meat more and make it become more tender. Trust me. It makes a difference. Also the silver skin doesn’t render so you get this very unpleasant chew from them. So yeah. That looks amazing man. But remove the silver skin next time 🙂
