Vegan Cajun Mushroom Pasta Recipe



Hey Foodies! This easy Cajun Pasta is packed with spicy flavors! Made with meaty shiitake mushrooms, bell pepper and cherry tomatoes, in creamy cashew cream sauce! Both comforting and easy to make!

Ingredients:
200g Spaghetti Pasta
Salted boiling water

3 tbsp olive oil
5 cloves garlic
1 red onion
75g shiitake mushrooms
1/2 pcs red bellpepper
30g cherry tomatoes
1/2 cup mushroom stock
1 cup oat milk
1 cup cashew cream*
3-4 tbsp cajun powder
1/2 tsp tarragon powder
2 tbsp nutritional yeast
Salt and pepper to taste

Cashew Cream:
1/2 cup cashew soaked in 1 cup water

  1. It started out looking really good but I couldn’t do the oat milk or cashew cream (just personal taste) The beiges thing though is it’s missing the celery: no real Cajun would ever cook without the holy Trinity (o ion, celery, and bell pepper)

  2. This video would be perfect with measurements of time. I’m a total newb at cooking pasta so idk how long I should let the Mishroom stock and oat milk sit before adding the cashew cream. Please help if you can thanks!!
