Healthier Dessert Idea: Pistachio Date Bites😍 These are such a fun and delicious dessert! Dates and pistachios are a perfect combo😋

for the pistachio butter (this makes extra):
1 cup pistachios (160g)
2 – 4 tablespoons melted coconut oil
optional: pinch of salt

for the bites:
8-10 medjool dates
1/3 cup pistachio butter (80 ml)
4-6 pieces of melted 80% dark chocolate
handful of crushed pistachios
flaky sea salt

1. Open up each date, remove the pit, then lay it flat on a baking pan or plate lined with parchment paper
2. Press each date down with a glass to smash it until it’s as thin as you’d like
3. If you are making the pistachio butter from scracth: add pistachios and oil into a blender or food processor and blend until smooth. Add less oil first and then add more if needed
4. Top the dates with the pistachio butter (this recipe makes extra pistachio butter)
5. Melt the chocolate in the microwave and add it on top of the bites. Top with sea salt flakes and crushed pistachios
6. Let set in the fridge or freezer until the chocolate has set and enjoy!

  3. A year ago now, I got a 2kg box of dates for a massively reduced price after Ramadan, I believe somewhere around £3-£4. Very nice dates, until I cut one open and see a bunch of seeds.
    These weren't date seeds but were in fact fly eggs and a dead fly. I began to have a habit of opening dates, and it turned out tons of them ended up having deceased insects in. I don't purchase dates anymore for this reason.
