  1. Did you find that the Beef flavor got washed out a bit by the Tallow from being Sous Vide held? Guga has a channel called Sous Vide Everything and he has seen this with any Beef and any fat added to it for a Sous Vide cook. It just washes out the beef flavor of the meat.

  2. I absolutely love your channel.
    But this is the first dish that makes no sense.
    Why not just cook it the traditional way.
    It's such a fantastic stew and sometimes ya just don't fuck with tried and tested things.
    I do appreciate you have to push boundaries and try new things.
