I'm gonna be honest I found out that I really don't like carbonara or atleast haven't had one lately that just didn't suck. Not sure maybe it's cause of how the sauce is made but anytime I have had it for the last few years it has just been soo heavy and greasy that I can't do it. At this point I would rather just have a Alfredo with bacon in it. I used to love Catb but don't know what happened

I agree, amatriciana is better. far less fatty andmore bright thanks to the romato.
I like it as a fresher and less rich alternative to carbonara. The acidic tomato really cuts through the fatty guanciale.
Calling one of the most well known dishes throughout the entire italian peninsula "relatively unknown" sounds a bit like a crime, but i'll let that slide.
The best pasta! But i miss the white wine after baking the guanciale
