Discover the vibrant flavours of Kam Heong Chicken, a much-loved Malaysian stir-fry showcasing the nation’s diverse culinary heritage. “Kam Heong,” meaning “golden fragrance” in Cantonese, perfectly encapsulates the dish’s aromatic qualities. This recipe blends flavours from various ethnic traditions: the umami depth of dried shrimp, soy sauces, and oyster sauce, reflecting Chinese cooking; and the warm, spicy notes of curry powder, curry leaves, and chillies, characteristic of Malay and Indian cuisines. To prepare this popular dish, we’ll first marinate tender chicken pieces, allowing them to absorb a symphony of flavours. Next, we create the signature Kam Heong sauce, a fragrant blend of spices and aromatics. Finally, the marinated chicken is stir-fried until beautifully golden, achieving a perfect balance of taste and texture. Can I blend the aromatics rather than leave them whole?
