take the cooking liquid put it back in the pot. let it reduce for like 2 minutes then stir in a couple table spoons of cold butter and some fresh tarragon and pour back over the mussles
Love this recipe! It's similar to one I use for christmas eve with my family every year.
One minor nitpick, I'm assuming you're using an induction stove? When you hold the camera close to it while it's running, it sounds like there's significant audio interference that gets generated. Not sure if there's an easy way to cut that in post production, but it was a bit alarming.
