Detailed recipe of crispy aalu pyaaz kachori

Stuffing
1. Heat 2 tbsp oil in a pan.
2. Add jeera, then green chilli + chopped onion.
3. Sauté till light golden.
4. Add red chilli powder, coriander powder, Kashmiri chilli, turmeric, salt.
5. Mix and cook for 20–30 sec.
6. Add boiled mashed potatoes and mix well.
7. Cook for 2 mins, then add fresh coriander.
8. Let the stuffing cool.

Dough
1. Mix 2 cups maida, ½ tsp salt, 2 tbsp oil.
2. Add water and knead a stiff dough.
3. Rest for 15 mins.

Assemble
1. Make small dough balls.
2. Roll a small roti.
3. Add stuffing, seal it, and gently flatten.

Fry
1. Heat oil on medium-low flame.
2. Fry kachoris till puffed and golden brown.
