I had read that it isn't just water they are dunked in, but cold chicken broth to give added flavor.
All of my meat comes from a family-owned butcher shop. Best chicken since I left the farm as a child. No added water at all.
i've seen a youtube chef say that cooked juices from a chicken can run pink, even if the bird is properly cooked, especially with air-chilled chickens.
I give mine a quick dunk in liquid nitrogen to make it crunchier
