Wontons should have prawn and pork. For a commercial grade wonton, you're looking at mostly prawn. The best wontons are almost entirely prawn, with fatty pork filling gaps. Big Wonton in Yuen Long, which has the best wontons in Hong Kong, have a single big-ass prawn as the centrepiece.
Ma ma Chow also added diced green onions and fresh minced ginger.
Give it a try, she owns several restaurants in her life time.
Why did u cook the wontons in the broth instead of cooking it in a separate pot of boiling water ?

What is the liquid you pour in first is it stock cube water, boxed stock, can you please specify what you use.
