Ingredients
🌿 For Yakhni (Broth):
Water – 4 cups (1 liter)
Coriander seeds – 2 tbsp
Fennel seeds – 2 tbsp
Cumin seeds – 1 tsp
Black pepper – ½ tsp
Cloves – 4–5
Black cardamom – 1
Green cardamom – 3–4
Mace (javitri) – 1 piece
Star anise – 1
Onion – 1 small (chopped)
Garlic – 1 whole bulb or 1 tbsp
Salt – 2 tsp
Fresh coriander leaves – ¼ cup
Mint leaves – ¼ cup (optional)
🍚 For Pulao:
Basmati rice – 2 cups (400 g, soaked 30–45 mins)
Potatoes – ½ kg (cut into medium pieces)
Oil – ½ cup (125 ml)
Onion – 1 large (sliced, for frying)
Cumin seeds – 1 tsp
Bay leaves – 2
Ginger-garlic paste – 1 tbsp
Green chili paste – 1 tbsp
Tomato – 1 large (chopped)
Curd (yogurt) – ¼ cup
Salt – as needed
Garam masala powder – ½ tsp
Kewra water – 1 tsp
Lemon juice – 2 tsp
Green chilies – 3–4 (slit)
Desi ghee – 1–2 tbsp
🌶️ For Red Chutney:
Kashmiri red chilies – 6–7 (soaked)
Tomato – 1 medium
Garlic cloves – 7–8
Salt – 1 tsp
Water – 1–2 tbsp (if needed)
